"Nicolas Dutour is a close friend. He has taught future oenologists in Toulouse, worked as a consultant oenologist for 50 estates and is now technical manager of the Clos Roca estate in Nizas in the Pezenas appellation in Languedoc. With global warming, the challenges facing Nicolas in his region are the same as those that Burgundy will face in the years to come. So, to anticipate my technical choices, it seems obvious to me to talk regularly with my friend. In addition to our discussions, we make Pinot Noir and Chardonnay cuvées together. Agronomy, viticulture, growing methods, plant material, maturity, alcohol, acidity - all the parameters are reviewed. This work forms the R&D part of the estate. At the rate at which our interprofessional bodies are moving, I’d much rather be ahead of the game if I want my children to be able to make wine in Burgundy one day. This Pinot Noir cuvée is fresh, fullbodied and spicy. It’s a great way to discover the red wines I like to make."
