"Masses of beautiful mousse – tiny bead, precise, but not aggressive. Super-super-racy. Elegance and depth, showing strong Pinot influence in the body. But there is almost more minerality and structure than fruit. Although the fruit appears slowly, becomes more rounded as the wine sits in the glass, showing more cherry character than the apples and citrus I'd normally associate with NV champagne. Lots of crisp, crunchy red notes, like sharp red-skinned apples, sour cherry, and a fleck of flintiness on the finish."
