Château de l’Étoile (Jura/l'Etoile)


Château de l’Étoile ligger i hjertet af Jura-regionen og er sjælen i et exceptionelt terroir i  l’Étoile appelationen. Ejendommen har næsten 17 ha vinmarker inden for L’Étoile-appellationen, som er en af ​​de mindste og mest prestigefyldte i Jura-regionen. 

L’Étoile vingårdens historie er dybt forankret i tiden, og går langt ud over områdets officielle anerkendelse som appellation i 1936. Vindyrkningen på ​​bjergskråningerne går tilbage til gallo-romersk tid og kan i gamle dokumenter spores helt tilbage fra det 13. århundrede. 

Efter næsten 140 års tornerosesøvn under den tidligere ejer, overtog Louis Fourrier, søn af Jean-Marie Fourrier (Domaine Fourrier) fra Gevrey-Chambertin, i 2024 ejendommen i partnerskab med vennen Florian Scatamacchia.  Louis og Florian har en mission om at bringe ejendommen tilbage til fordums storhed.

Markerne er beplantede med de grønne druetyper Chardonnay, Savagnin og den sjældne Savagnin rosé, samt de blå druetyper Poulsard, Trousseau og Pinot Noir (sélection massale). Der arbejdes efter de samme bæredygtige principper som hos Domaine Fourrier i Gevrey-Chambertin, med respekt for naturen og øje for detaljen for at bevare den naturlige balance på de enkelte parceller. Al høst foregår manuelt.

Vinifikationen foregår ligeledes efter “Hands-off” princippet for at få terroirets udtryk på flaske. Vinene lagres “Ouillé” på ældre Bourgogne fade , hvilket betyder, at fadene "toppes op" for at undgå oxidation (og at der ikke benyttes "Flor" - den gærtype der skaber de oxiderede Juravine). Vinene aftappes uden filtrering.

Produced from the estate’s finest plots, this Chardonnay (manual harvested) grows on two distinct types of soil:

– High plots: 30% clay, 30% silt, 20% limestone
– Low plots: 40% clay, 40% silt, 13% sand

These varied terroirs provide beautiful aromatic complexity and natural tension. The vines, aged between 60 and 70 years old, are trained using the single Guyot method, from massal selections. Short pruning is favored, promoting quality over yield. Sustainable farming practices are used, with grass cover every other row to promote soil decompaction and revive microbial life.

Alcoholic fermentation is spontaneous, carried out solely with indigenous yeasts in steel tanks. Malolactic fermentation takes place in barrels. Aging is 100% in old barrels, without new wood, in topped-up barrels.

Vines aged between 60 and 70 years old, trained using the single Guyot method with massal selection. Short pruning to promote berry concentration. Sustainable farming with every other row grassed to stimulate organic life in the soil.

Spontaneous alcoholic fermentation in steel tanks with indigenous yeasts. Malolactic fermentation in barrels. Aged in old barrels (topped up), without new wood. Unfiltered wine.

This 100% Savagnin rosé (manual harvested) comes from several plots with predominantly clay-limestone soils, contributing to the wine’s structure and finesse.

Savagnin rosé is a rare genetic mutation of Savagnin blanc, belonging to the Traminer family. Now almost extinct, it is still carefully cultivated at Château de l’Étoile, one of the last estates to preserve its cultivation. Vines aged between 60 and 70 years old, trained using the single Guyot method with mass selection. Short pruning and alternating grass cover to preserve soil life.

Spontaneous fermentation with indigenous yeasts in stainless steel tanks. Malolactic fermentation in barrels. Aged exclusively in stainless steel tanks, without wood. No filtration.

Made from 33% Poulsard, 33% Trousseau, 34% Pinot Noir (manual harvested). Due to insufficient volumes in 2024, the three red grape varieties were blended to ensure healthy and balanced fermentation. This unexpected combination has resulted in a beautiful harmony.

Vines aged between 60 to 70 years old, trained using the single Guyot method, from massal selections. Short pruning to ensure quality. Grass cover every other row to regenerate the soil.

Maceration in steel tanks for 10 days. Fermentation using natural yeasts. Aged in old barrels, without new wood. Unfiltered.

100% Chardonnay (manual harvested).  Located at the top of the L’Étoile appellation, this unique plot is enclosed within a walled vineyard, a remnant of the historic castle built by Jean I of Chalon-Arlay. The walls and dense vegetation provide natural shade and coolness to the vines. Soils composition : 21% clay, 23% sand, 19% silt, 16% limestone, 19% pebbles.

Vines aged 60 to 70 years old, trained using the single Guyot method with mass selection. Short pruning to maximize grape concentration. Sustainable farming with every other row grassed to preserve soil structure and promote microbial biodiversity.

Alcoholic fermentation in steel tanks using only natural yeasts. Malolactic fermentation in barrels. Aged 100% in old barrels (topped up), without new barrels. No filtration.
