Denne fremragende hvidvin er fremstillet som en hyldest til Saint Monts gamle klassiske druer ("De genfundne vinstokke"). Vinen er fremstillet på basis af 60% Gros Manseng, 30% Petit Courbu og 10% Arrufiac fra ca. 25 år gamle nordvest vendte vinmarker, der står på Pyrenæernes forbjerge. Vinen er gæret og lagret på rustfri ståltanke - heraf 6-8 måneder sur lie - for at bevare vinens friske og vibrerende frugt.
