“Vi lover, at vi ikke er ved at lancere en episk druesaga kaldet 'Vores historie' - mest fordi vi ikke har en. Santolin Wines startede ikke for 250 år siden 'i de tågeindhyllede foden af Pyrenæerne' eller noget som helst endog fjernt eksotisk. Faktisk er vi slet ikke store.
Vi er et ungt par dedikerede, lo-fi vinmagere fra Yarra Valley. Samlet personale: Adrian (med italienske aner) og Rebecca (jeg er en ægte Kiwi) - det er os på billedet. Efter at have arbejdet på andre vingårde i alt for mange år, besluttede vi i 2012 at tage alle vores sparepenge og købe et egetræsfad, en tank og to tons Pinot Noir druer og begynde at gøre tingene på vores måde.
Hvis vi spoler et par år frem, blev vores indiestatus cementeret med en sejr for 'Best New Act' ved Young Gun Awards, og vi har desuden har vundet et par trofæer, herunder 'Best New World Chardonnay' og 'Best International Chardonnay' ved Hong Kong International Wine & Spirit Competition samt Decanter Asia. Vores hjemlige vinjournalist James Halliday er også glad for vores vine.”

De håndplukkede Fiano druer til denne ultra lækre hvidvin, kommer fra en enkelt mark i Heathcote. Vinen er gæret på rustfri ståltanke og efterfølgende lageret 4 måneder på hhv. 50% ældre egetræsfade samt 50% rustfri ståltanke. Vinen er ikke klaret og kun let filtreret ifm. tapningen.

Santolin: "100% Pinot Noir from Willowlake Vineyard, Gladysdale, Upper Yarra Valley. Produced from fruit grown on a single 30+ year old block in the Willowlake Vineyard in Gladysdale. At 250m above sea level, this vineyard has a blend of soils combining rich, red volcanic soil from the hills and clay loam. The majority of the vines are planted on a north east facing slope and receive high rainfall across the year. The vineyard is hand pruned with vertical shoot positioning and shoot thinned when required throughout the growing season. Fermentation in open fermenters and maturation for 10 months in 100% French oak (30% new)."

Santolin: "100% Pinot Noir from Syme on Yarra Vineyard, Gruyere, Lower Yarra Valley. This wine is produced from fruit grown on a single block in the Syme on Yarra Vineyard in Gruyere, located approx. 150m above sea level with clay loam soils that sit above ancient rocky subsoil. The vineyard has a gentle east facing slope, minimising frost risk and maximising sunshine exposure with good rainfall across the whole block. The vineyard is hand pruned and shoot thinned when required throughout the growing season. Fermentation: Whole bunch carbonic maceration + whole berries naturally fermented in open pots. Maturation for 10 months in 100% French oak (30% new)."
