Produced from the estate’s finest plots, this Chardonnay (manual harvested) grows on two distinct types of soil:
– High plots: 30% clay, 30% silt, 20% limestone
– Low plots: 40% clay, 40% silt, 13% sand
These varied terroirs provide beautiful aromatic complexity and natural tension. The vines, aged between 60 and 70 years old, are trained using the single Guyot method, from massal selections. Short pruning is favored, promoting quality over yield. Sustainable farming practices are used, with grass cover every other row to promote soil decompaction and revive microbial life.
Alcoholic fermentation is spontaneous, carried out solely with indigenous yeasts in steel tanks. Malolactic fermentation takes place in barrels. Aging is 100% in old barrels, without new wood, in topped-up barrels.
